Here, pressure reveals secrets, the gentle sway of currents caresses the bottles and microvibrations orchestrate a unique transformation. This marine influence creates a more complex and balanced wine, enhancing its flavor profile and aromatic nuances.

Mar de Anémonas
Anemones are fascinating creatures that live on the seabed. Their appearance resembles sea flowers with tentacles full of vibrant colors , which makes them stand out from their surroundings. Similarly, this wine is differentiated by its vibrant aromas, its fullness and its expression of the underwater terroir and its ecosystem on land. The history of our wine is born in a unique landscape of harsh mountains, where ancient olive trees intermingle with centuries-old vineyards on slate terraces and continues in the depths of the sea, where the pressure of the water, the constant temperature, the absence of sunlight and Marine currents contribute to an evolution of its aromas and flavors in a unique way.

Elaboration
The grapes go through meticulous harvesting and hand selection . Each bunch is completely destemmed and fermented separately in small batches, categorized by variety and origin . Fermentation occurs spontaneously in stainless steel tanks, driven by indigenous yeasts. Gentle manual pressing in a wooden basket press ensures delicate extraction and exceptional textures. It is then aged for 8 months in French oak barrels . Finally, after bottling, it waits to be submerged under the sea to refine.
Finally we submerge the wine more than 20 meters deep where it benefits from extraordinary conditions. The maritime influence accelerates the evolution of wine 3 to 4 times faster than on land . This influence of the sea creates a more complex and rounded wine, with a more intense flavor and aromas. The tannins soften, the fruit aromas intensify and new mineral and saline notes appear.

Tasting
Vibrant red fruits, with soft toasted flavors and mineral and balsamic notes. On the palate, this wine presents a powerful expression of wild berries and integrated tannins , with an elegant finish. Grenache reveals nuances of juicy red fruits, such as ripe strawberries and cherries, along with floral and herbaceous notes. Cariñena adds depth and structure, enriching the complexity of the wine with its black fruit flavors and earthy nuances. Meanwhile, the Syrah brings a touch of spice and additional layers of black fruit.
